Yields 12 portions each portion containing 4 oz chicken.
- 1-2 Orange Peppers
- 1 Red Onion
- 1-2 Limes
- 4 tbsp Olive Oil (extra virgin)
- 1 tbsp White Vinegar
- 2 packets Weber Chipotle Seasoning
- 3 lbs Chicken Breasts
Dice orange pepper and red onion
Combine orange pepper, red onion, oil, vinegar, and chipotle seasoning in a large mixing bowl
Cut chicken into bite-sized chunks
Add chicken and lime juice to other ingredients and mix thoroughly
Let mixture sit 10-15 minutes
Heat a large pot on medium heat and add all contents from bowl, then cover. Cook until all fluid around the chicken is bubbling. Mix/stir occasionally to guarantee the chicken is cooked through.
Cook until chicken is cooked through, approximately 30 minutes.
