Recipe – Taco Chicken

 

Taco Chicken

Yields 12 portions each portion containing 4 oz chicken.

  • 1-2 Orange Peppers
  • 1 Red Onion
  • 1-2 Limes
  • 4 tbsp Olive Oil (extra virgin)
  • 1 tbsp White Vinegar
  • 2 packets Weber Chipotle Seasoning
  • 3 lbs Chicken Breasts
  1. Dice orange pepper and red onion

  2. Combine orange pepper, red onion, oil, vinegar, and chipotle seasoning in a large mixing bowl

  3. Cut chicken into bite-sized chunks

  4. Add chicken and lime juice to other ingredients and mix thoroughly

  5. Let mixture sit 10-15 minutes

  6. Heat a large pot on medium heat and add all contents from bowl, then cover. Cook until all fluid around the chicken is bubbling. Mix/stir occasionally to guarantee the chicken is cooked through.

  7. Cook until chicken is cooked through, approximately 30 minutes.

  8. You’re ready to serve! Meal idea: Serve over rice and top with avocado!
